Why Should I Choose?

The nougat cooking boiler and turbo mixer consists of two main chambers: the cooking boiler (Seidomat) and the stirring turbo mixer.
The cooking boiler (Seidomat) is located at the top; it cooks the product using steam and can operate at atmospheric pressure or under vacuum.
The high-volume design allows the product to foam without the risk of being sucked by the vacuum pump.
Observation glasses and pressure gauges are available on the boiler for product and process monitoring.
Steam is passed through the coils inside the tank, whereby the product is brought to the desired temperature and the necessary vacuum process is applied.
The cooked product is transferred to the turbo mixer located underneath via an actuated valve.
The egg solution is transferred from the resting tank to the turbo mixer and mixed at high speed with the cooked nougat product, bringing the nougat dough to the desired consistency.
Product inlet/outlet, chimney, steam, and air inlets are controlled by actuated valves.
The system operates fully automatically.
